People shouldn't weigh when they have been sick

I don't know if I'm really going to count my weigh in for this week. I was bed ridden for almost 6 days terribly sick and really wasnt eating much and I'm sure I will put it back on this week since I'm back up and around.

The mashed cauliflower experiment went horribly wrong... so wrong that I dont know that I can ever eat regular cauliflower again lol Seriously, it was disgusting. You can ask Dave... he even looked surprised as I spit a mouthful of it in the sink. And the smell... ugh I know cooked cauliflower isn't the most pleasing of cooking smells, its on the other end of the spectrum from, say... Bacon, but dear god my kitchen stunk, which is odd because I steam the stuff all the time to eat.

Not terribly much to report for this entry, because of being sick there are no interesting hiking or walking tales to tell. The highlight of my week was actually obtaining Adam Lambert tickets, he will be performing in Charlotte, NC on my birthday. After many refreshing attempts on ticket master AND being told on the phone it was sold out (3 minutes after they went on sale) I finally got the computer to tell me there were 3 tickets. So, Dave, Amanda and I will be making the road trip up in July to see him. With all of Dave's travel he has enough reward points to get us a free room at the Crowne Plaza so thats extra cool.

This weekend is the Skunk River Bike Rally. Dan and Dave will be running the cornhole tournament while I do duties as photographer for the organizers. We are donating some of our candles as door prizes and I will have samples there at the cornhole tent, but since I didnt pay to be a vendor I wont be "selling" any (plus I will be too busy for 10 hours of the event taking pictures) but I have had some coupons printed to hand out. Hopefully I won't totally exhaust myself, but I will have Sunday to rest.

I miss walking, but until my lungs tell me its ok, exertion is the last thing I need right now :(

Oh... and I've decided I want to figure out how one grows black peppercorns

Rainy Days & Mondays & weigh ins always get me down

I know, I know... We havent gained, I should be jumping for joy :) Last week was difficult, between Dave's neck pain, my hand pain and post funeral things to do, we didn't get to walk at all.

Dave got a semi workout yesterday, his parents got some new furniture and gifted us their old (well, not "old" its less than 4 years old) couch and loveseat, which was awesome since our couch broke and the cats had killed the upholstery on the loveseat. He went to his parents to load up and he and his dad bright it back and he had to move the old stuff down to the basement.. so he did a lot more than I did.

Saturday and Sunday I got to indulge in one of my favorite past times.... watching the Food Network. Dave and I both agreed Giada was rocking the cleavage on her Mother's Day episode.

We haven't had red meat in about 3 weeks, and we were both really wanting steak, so last night I made filet mignon with béarnaise sauce, baked potatoes, and baked garlic shrimp. I am very proud of my picky eater of a husband, not only did he TRY the béarnaise, he really liked it!! Those of you that know Dave know that's pretty amazing.



We enjoyed our dinner and settled down to watch Julie & Julia (to round out our weekend of food tv) and both of us loved it. If I had to break it down, I would have to say I enjoyed the Julia parts more than the Julie (although Dave and I both adore Amy Adams), Meryl Streep was just too funny. I am going to need to find a biography on her and read it.

Sometime this week I will be attempting to make mashed "potatoes" out of cauliflower, Dave has agreed to try it even though he hates the stuff so I can't wait to see how that goes!!

Today is a really really really rainy day, flash flood watches everywhere, so I doubt we'll be walking tonite, and we already have plans tomorrow night, so it looks like at least Wednesday before walking resumes....

On an upbeat note, the conclusion of the Doctor Who 2 parter with River Song was awesome... Stephen Moffat is subtly throwing things in that will culminate in the finale in June (I HATE that a British TV season is only 13 episodes long). Sad thing is, the US is 2 episodes behind what the UK is showing so I really don't have anyone but Dave to speculate with since we are watching them ahead of BBCA, totally frustrating!!!

Heavy Hearted Weigh In

This was not the best week to weigh in. Dave's herniated discs gave out on Tuesday and I pulled a tendon in my hand that also pinched a nerve and I'm in some pain.. we only managed to walk one day. On Saturday we lost Dave's grandfather, and trying to eat healthy when having to eat on the fly and eat out and being upset is just not a great combination, I really dont have the mental wherewithall to stress about it though.

Hopefully we will get back on track this week, though it appears the weather is not going to want to cooperate much.

When I went to the Dr about the pain in my hand (left one) he was looking at the right one and its been supposed I have arthritis because of the way my hand looks and the problems Im having. When I go for my A1C in May, he is going to run a rheumatoid panel to check. Oh Joy

And of course when Im having issues with both hands, I was honored with the request of being a pall bearer(ette) for Dave's grandfather. I managed to do it without major issues though :) PawPaw really went out in style, if I was not going to be cremated I would definitely want this



Im so tired I completely forgot to lay anything out for dinner, hopefully we can throw something healthy together...either that or Im going to skip dinner and go straight to bed and sleep for about 12 hours

Perceived Extertion Scale

I mentioned this in a previous post, so I thought I would post it. No, this is not the real scale, but I like this one better because its funny, and funny is what gets me thru the tough times

* Level 1: I'm watching TV and eating bon bons
* Level 2: I'm comfortable and could maintain this pace all day long
* Level 3: I'm still comfortable, but am breathing a bit harder
* Level 4: I'm sweating a little, but feel good and can carry on a conversation effortlessly
* Level 5: I'm just above comfortable, am sweating more and can still talk easily
* Level 6: I can still talk, but am slightly breathless
* Level 7: I can still talk, but I don't really want to. I'm sweating like a pig
* Level 8: I can grunt in response to your questions and can only keep this pace for a short time period
* Level 9: I am probably going to die
* Level 10: I am dead

Greenway Walk

Our city has built a greenway for people to walk/jog/bike on, its really pretty and I've walked it several times in the last couple of years.

Part of our walking plan includes not walking the same place all the time so that we don't get bored, so tonite after dinner we headed to the greenway, which is 1.36 miles one way (and you have to go both ways if you want to get back to where you parked your car). It has a little offshoot track that is .22 miles around, but we didn't walk that part tonite, because just doing the trail would mean we were doing 2.72 miles and we are used to only 2 two. I even managed to jog a few feet on the way back

And BOY, did my legs let me know I was going farther than we usually did. Once we had gone the two miles, I could just hear my leg muscles saying "Yay, we are do....wait why are you still going...stopppppppp, you did your two miles, stop, stop, stop!"

I didn't listen to them, I kept going although the last little bit threw me up to about a 8.75 on the "perceived exertion" chart I use. They got back at me though, they got in cahoots with my back and made moving next to impossible after I got home.

Wonder what they are gonna do when we throw the loop in next time? ssshhh don't tell them I said that.

Adminisrative Asst Week Weigh In

I have to say this first weigh in was a huge disappointment for me. I lost a whopping .6 of a pound. But to be fair I have to say (cause if I don't I will get a face from Dave) in all fairness, I'm suffering from PMS, and considering our metabolisms have come to screeching halt because we quit smoking I am lucky I lost ANYTHING. He, on the other hand lost 3 pounds!! I'm so proud of him.

He has really been good this last week with portion control and eating healthier things. We keep food journals online on the Fitday website and we are both struggling with the same problem, we are not eating enough calories for weight loss and finding things to up that number while staying under the fat and carb ratio is NOT easy.

I got to work and one of my co-workers came in with flowers and a card and the announcement that he was taking me to Red Lobster for lunch for Administrative Asst Week...that cheered me right up!!

I was really good, I had broiled flounder, no veggies, shrimp cocktail and salad with vinagrette dressing..and only 2 cheddar biscuits (oh the calories I must have burned restraining my self from reaching for that basket!)




Cajun Shrimp

Recipe I found that Dave would actually eat if modified:

* 1 tablespoon olive oil
* 1 small onion, finely chopped
* 1 can (14.5 ounces) reduced-sodium chicken broth
* 1 cup long-grain white rice
* Coarse salt and ground pepper
* 2 red bell peppers (ribs and seeds removed), sliced lengthwise into thin strips
* 8 ounces precooked andouille or kielbasa sausage, halved lengthwise and thinly sliced crosswise
* 1 pound frozen large shrimp, thawed, peeled, and deveined

Directions

1. In a medium saucepan with a lid, heat 1/2 tablespoon oil over medium. Add onion; cook until softened, 3 to 5 minutes. Add broth, and bring to a boil. Add rice; season with salt and pepper. Cover, reduce heat to low, and simmer until rice is tender, about 20 minutes.
2. Meanwhile, in a large nonstick skillet, heat remaining 1/2 tablespoon oil over medium. Add bell peppers and cook until crisp-tender, 4 to 6 minutes. Add sausage and shrimp; cook until shrimp is opaque, 3 to 5 minutes. Season with salt and pepper.
3. Divide rice among four bowls; top with shrimp mixture, and drizzle with any pan juices. Serve.

I left out the peppers and substituted turkey kielbasa and added chili powder to the rice mixture

It was awesome, but a full serving was too much to eat in one sitting!!
